Q: hands free phone use

My husband is a quadriplegic (no use of hands at all).  I know that "Hey Siri" would be a good way for him to make a phone call.  But how could he answer a call?  And how could he end a call using his voice only?  Before I buy him an iPhone6, I would like to know that he could use it independently.
