The iTunes Match version of the song Def Leppard - Animal *****!!!
I have a good 320kbps version and when i do the "Do iTunes Match" it replaces by a 256kpbs version (but with a 64kbps quality).
Any help?

Do you mean that you replace the original track in your iTunes library with the matched version? If so, you don't need to do this - just keep the original.
If you are referring to the track that you get on your iOS devices, if matched, they will be 256 Kbps. There is not much you can do if the track matches with an inferior copy which will be the one supplied by the record company to Apple.
