The Activity app uses an accelerometer to identify movement, so it can help to improve the accuracy of recorded results (including steps taken) if you allow your arm to swing naturally whilst walking. It may also help to record workouts using the Workout app (eg Outdoor Walk).
Achievement of the hourly Stand goal is also based on data recorded by the accelerometer. This aims to reflect whether you have stood and moved around for at least 1 continuous minute within each hour, so it may again help to walk around with your arm swinging naturally.

I'm not walking or standing differently than I did 6 months ago. It seems like it's getting "out of calibration" but doing the calibration steps is not helping.
