I was unaware of the "Move to iOS" app when I set up my iPhone. I want to know if there is a way to launch it after I have completed the set up process?

I understand that you have an Android device, and you’d like to utilize the Move to iOS app on the device in order to get its information over to your new iOS device. It looks like the only way for you to get to this menu again will be to restore your phone as new, and then use the Move to iOS app. Of course, you should always make a backup first:
