Is there any shortcut to merge/unmerge cells?

I haven’t found any shortcut or icon to merge cells in tables.

That is because there isn't one. But you can roll your own shortcuts for Merge Cells/Unmerge Cells.

In System Preferences : Keyboard panel : Shortcuts : App Shortcuts

  1. Click the + box to add the Application shortcut
    1. Application : Pages
    2. Menu Title: Merge Cells
    3. Keyboard Shortcut: (type control m, it will image as ^M)
    4. Add
  2. Click the Pages entry in the App Shortcuts, and click + again.
    1. Menu Title: Unmerge Cells
    2. Keyboard Shortcut: (type control+shift+m, it will image as ^⇧M)
    3. Add
  3. Quit System Preferences

Back in Pages, after you extend your cell selection to merge with shift+right-arrow, you can now press control+M to merge them, and shift+control+M to unmerge the cells. Always be certain to refer to the existing keyboard shortcuts for Pages in its Help menu.
