Q: Getting a new ipad, questions

That depends on how you want to set up the new iPad, meaning do you use iTunes to backup and sync or are you using iCloud only?

IMHO, the easiest thing to do would be to transfer the contents from the old iPad to the new one, then delete what you do not want on the new iPad. You can not selectively delete items from a backup, restoring everything and then removing what you don't want would be the approach that I would take.

That is incorrect. You can not selectively restore certain content only from a backup. It is all or nothing when you restore a backup. That is why I suggested, deleting the content that you don't want after you restore the backup data.

You can select only the apps, movies, photos, books and so on to sync from iTunes after you restore the backup, but when you restore a backup, all of the data will be restored to the device,

Absolutely. I have three iPads an iPhone and an iPod Touch that I backup with the sameiTunes library with no issues at all. You can name both iPads the same thing and iTunes will know which is which by the serial number, not the name. You give them different names so that you don't get them confused.
