Q: How to save pics/videos but restore everything else

I understand that you are wanting to use your dad's iPhone but still keep the pictures. That is something I can help you out with. 

I would first start with importing the photos to your computer and save them to a folder. Take a look at the first article below to walk you through on how to import the photos to your computer.

The next step would be to restore your iPhone with the latest version of iOS. The next article will walk you through how to do that with iTunes.

The last step once you have setup your iPhone as new, would be to sync the photos by using iTunes. In iTunes, you can sync the photos from the folder that you created on your computer. The last article will walk you through those specific steps.

To save the photo to your camera roll, tap  and you should see an option to save the photo. You will need to do that for each one or just keep them in that album.
