Not sure what you are asking? The article you linked from is referring to using the Messages and FaceTime apps, but your question is about your Apple ID info. So, are you talking about a phone number associated with an App, or the phone number on your Apple ID info page?

There is no forum for Apple ID so I picked this one - I want to change my number that shows up in FaceTime and it states to change it in your Apple ID but it doesn't give that option
The number associated with your FaceTime app is your iPhone phone number.
So, where is it that you are seeing the phone number that you want to change? In the FaceTime app on your Mac? The number that is displaying is the number of the phone where the same ID that you have signed into FaceTime on your Mac and on the iPhone whose number it is.
