How do I clear a spreadsheet but keep the formulas?

The easiest way is to make sure the locations for data entry are in a single range of cells (like a column or row) so you can simply select the range, and delete.

If you have designed a spreadsheet where data entry is scattered through out a table, then I suggest making the various scattered cells refer to another table where they are in a column.... like this, then you can select the column the second "Data Entry" table and delete

In the calculation table (on the right), the formula in cell B1 is:

=Data Entry::A1

shorthand for this is:

B1=Data Entry::A1

C2=Data Entry::A2

A7=Data Entry::A3

D9=Data Entry::A4

D4=Data Entry::A5

At a very basic level, you can select all the cells that contain original values and then press the delete key:

Before, with column C selected:

The numbers are in C, the formulae (simple multiplications) are in D.

After pressing delete:

If your spreadsheet is more complex, it might be worth considering placing the input data in one table and the formulae in another:

I input the data in the first table, I calculate it in the second. Selecting and deleting all the data in the first table leaves the formulae in the second table intact.

You could take a copy of the document and clear the values manually (leaving the formulas). Then in your menu File > Save as Template ... The next time you need to "reuse" the spreadsheet in your menu go File > New and choose from My Templates.
