Can I/How do I start my new iPhone 5S without inserting SIM or using iTunes?
I just purchased it and I forgot that I need a *micro* SIM.

You can't. You can activate it without using iTunes, but it is a phone after all, so you need a sim card. Without that you cannot do anything with it.
