Q: 'Restoring from iCloud Backup' seems stuck

So, I bought myself a new iPhone 6S on December 1st. First thing I did was restoring my last iPhone's backup from iCloud. Everything seemed to be going smoothly as I could use my new iPhone and it was working just fine. One day later though, I noticed this line of text that appeared on the lock screen: 'Restoring from iCloud Backup'. I thought to myself this couldn't be right.

 

I know you can stop restoring the iPhone in the iCloud Backup menu, but I found out that not all the data has been restored from the backup. Well, I know for sure some pictures are missing in the Messages app and a few maps from the Nike+ Running app. But more is probably also missing. I have already tried switching the iPhone off and on and letting the battery run out of juice. When I plug it in and it is automatically trying to make a backup on iCloud the iPhone asks me if I want to continue to restore from iCloud because otherwise it can't make a backup. Obviously I pressed the download button, but nothing seems to be happening. Now it is also telling me I can't update to iOS 9.2 because of this restoring problem.

 

So, it's been 2 weeks now that my new iPhone has been trying to restore a backup from iCloud. How can I solve this without losing the data that hasn't been downloaded yet and without losing any new data since the last backup was made on my old iPhone?
