Q: I have 6 kids. What to do concerning family sharing?

Do I really have to leave out a kid from family sharing or is there a way to add more than 6 people in family sharing?

iPhone 6 Plus, iOS 9.2

You can only add up to 5 Apple IDs to a family group.   But that does not mean you can only add 5 devices.   You can have 2 or more devices share the same Apple ID.  i.e if each kid has a device of their own, you can have 2 of them share an Apple ID, and join family sharing as one person. Both devices would be joined to family sharing as one Apple ID.
