(I am also running Windows 7 on Bootcamp). I used Open Hardware Monitor and noticed that the GPU temps were over 700 degrees celcius. At that temp, my computer should have melted. What is the problem?
My computer doesn't shut down on it's own, but I do hear the fans.

It's not really a BootCamp specific question, it's a 'why is my hardware giving out obvious wrong temp readings' question...
Your choice, however IMHO it is a Boot Camp / MS Windows issue and not an OS X or hardware issue. That being said, at 700 degrees C as you state yeah it would have melted. I think your report is flawed. If the computer continues to run and does not shut down then it is running okay at least from a heat point of view.
