Can the sensitivity be adjusted on iPad's keyboard? My folks are in their nineties and shake too much in their hands resulting in double hits on the keyboard and elsewhere.

When you talk about the keyboard, I presume you are speaking of the onscreen keyboard and other functions accessed by touching the iPad's screen. There are several adjustments you can make to this, described on this help page - Touch Accommodations - iPad User Guide
