You may need to delete all conversations with the individual after that to ensure that messages go through as SMS.

Your only other alternative after deleting your conversation with the friend is to go to Settings>General>Reset>Reset Network Settings. That will also delete any saved Wi-Fi passwords, and also ensure that you have an SMS plan provisioned on your account. However, that should not be an issue if you have been able to send SMS to other non-iOS users. Also, after deleting the conversation thread you have with this friend, have them send you a message, and then try responding to it.
