How do I transfer my contacts from an iPhone 3 with a big SIM card to an iPhone 5 with a Nano SIM card

The iPhone does not store contacts on the sim card. If you had another kind of phone that does store its contacts on the sim, your local cellular provider store could copy the contents of the sim from one size card to another and then the iPhone can import those but that is the only thing it does with sim contacts -- and that won't help when the old phone is an iPhone.
