In general, yes. Whatever you can see on your iPad you can AirPlay to the big screen in the living room. However, content providers have the ability to limit/prevent certain a videos or streams and even entire apps from being mirrored. For example, trying to play a dvd/blue ray on a computer may have DRM restrictions so it could only be viewed on the source computer. And providers like YouTube may steer you towards the native app rather than allow the AirPlay...
