Pages menubar : Edit : Emoji & Symbols, or control+command+Space key combination. Same location in other Apple applications. Also, available as a menu item from the Input menu in the right-side, Finder menubar.

Wrong answer. I don't want funny pictures or symbols.

How can I write something like: świąteczna - where are the other alphabets?

It wasn't the wrong answer for the question about Special Characters as that was what that menu item was named before Apple decided to change it. One can access nearly every character known to man from that panel, if they select the gear icon and Customization to add character categories. There is far more to it than “funny pictures and symbols.”

To gain accented characters while you type, you can press and hold a letter key, and a pop-up list of characters is presented. This will vary based on your language and region settings, and selected keyboard input language.

If you have your Input menu selected to appear (System Preferences : Keyboard : Input Sources) in the menubar near the time display, you can access the Keyboard Viewer, where selecting the option, control, and shift keys will highlight alternate characters for document insertion.
