Is there a way to highlight text on the Notes and Stickies applications on OS X?

You can change the color of the text, add pictures, all kinds of stuff. I have to assume you can highlight text as well. Is there a way? How do you do it?

MacBook, OS X Yosemite (10.10.3)

Notes uses the Document Color button in the Text window (Format menu > Font > Show Fonts or ⌘T) as a Character fill, or highlight:

Stickies does not respond to this setting, but if you copy some text with the highlighting color you want from Notes (or probably most other applications), and paste into Stickies, the highlighting will display, and you can Copy Style and Paste Style to apply it to other text.

Notes will not allow you to change that gnarly link color. It is hardcoded into the application.

If you visit the Notes Edit menu : Substitutions : Smart Copy/Paste — that feature will allow you to drag/drop a link from the browser onto the Notes message. It will appear with the page title boxed like the following, and it remains a hyperlink when double-clicked.
