It is not presently possible to review data from the built-in Activity app or Workout app on a year to date basis. If you would like Apple to consider adding that feature, you can suggest it here:

However, health and fitness data from Apple Watch, iPhone and other sources is saved and aggregated within the Health app on iPhone. This data can be exported, which you may find helpful when tracking your cumulative progress.
The Activity app on iPhone also has a Share button (at the upper-right of the screen) that can be used to share data - including to social media, Messages, Mail, Notes and a printer.
There are also some third-party apps that you may find helpful - for example:
QS Access

You can also export data directly from the Health app (Health Data > All - Share button at the top right).
