I can understand how inconvenient it can be if the mail app isn't working right for you, and I'd be happy to help you solve this problem. First off, let's try force restarting your iPhone with the steps below:
- Press and hold on the Sleep/Wake and Home button at the same time for ten seconds, or until the Apple logo appears.
Once you've force restarted your iPhone, try checking to see if the mail app is still crashing. If it's still crashing, you may need to reset your iPhone to factory settings. This guide written by Apple should help you with the whole process:
