Is there a way to place my music on the service without using iTunes as the middleman? If not, is there any other cloud service I can use then use that service to add my music to iTunes Match?

iTunes Match gives you the iCloud music library. The iCloud music library becomes your iTunes music library. So, you need iTunes to use the iCloud music library. (I'm not sure how your iPod is involved in question.)
If your device is manually managed and your content isn't also in your iTunes library then see Recover your iTunes library from your iPod or iOS device before deciding whether or not you also want to subscribe to iTunes Match.
