On those MacBook Pros, I think that the warranty would still be valid. However they are all 2012 or earlier models so you probably won't have valid AppleCare anyway.

My idea is to buy a MacBook Pro 2016 ( no Retina display) and update ram with 16Gb and the hard disk with 1tera ssd; bun I will do it if the warranty remain valid.

Since the RAM is not user upgradeable on 2015 MacBook Pros, I doubt that it will be on 2016 models.
The hard drives in MacBook Pros have never been user replaceable.
So replacing any of these items in a 2016 MacBook Pro will almost certainly void any warranty.

True in the retina models, but no so in the non-retina models. The user manuals for my 2010 and 2011 both have instructions on how to install RAM and HDDs.

The most complaint I received from Genius Bar was the advice to restore the original HD and RAM (I had upgraded to SSD and upgraded RAM) for the purpose of servicing the system, since Apple would only be responsible for their original equipment.

This is actually the same model that was introduced in 2012. My rule of thumb is if the user manual has instructions for replacing the RAM and HDD, it will not void the warranty. If not, it will void the warranty.

I have never seen Apple instructions for user replacement of hard drives in MacBook Pros.
I have never seen a user manual for any MacBook Pro. Can you provide a link to such a document?

The ones for the 2010 and 2011 MBPs have the identical instructions that BobTheFisherman posted. (I have 17" MBPs). The instruction manual for the 2006 MBP has instructions only for replacing RAM. That probably is because opening a non-Unibody MBP is quite involved compared to a Unibody MBP making it difficult to get at the HDD.
I am sure that it would not be too difficult to find the PFD versions of the manuals.
