You can view daily, weekly, monthly and yearly charts for various activity-related data in the Health app on your iPhone.
In the Health app (heart icon on a white background), go to:
- The Dashboard tab (you can select what charts are shown here);
- Health Data tab > Fitness > choose a metric (eg Steps) > the Show on Dashboard option is included on the next screen.

This data can also be exported, which you may find helpful for more detailed analysis (Health app: Health Data > All - Share button at the top right).
Third-party apps that you may also find helpful include, for example:
QS Access
