Most Users can type Option-e-e to get é, but there are other methods.

It's much quicker than having to look for the actual accented é in the keyboard option.

It appears from your description that your "delay until repeat" is set too low, and by the time you specify which accented character you want, you have two of them, the second one accented as desired.
