I want to email links and info directly from safari page but gmail is the only email option available. How to change it to outlook or add outlook to share menu?

The simplest way is to open Mail app (the Mac one), go to preferences, and in General change 'Default mail reader' to Microsoft Outlook.
In other apps, the share menu may still show the Mail app icon, but in selecting it, it will open outlook to create the email for sharing whatever it is you want to share.
