Apple Care, if already purchased by the previous owner, travels with the watch, not the owner of the watch. All you need do is register your serial number: Your Support Profile for Registered Purchases.

If you are referring to the One Year Limited Warranty (provided by Apple as standard):

This stays with the watch (the warranty is associated wth the serial number, although proof of purchase may also be required when arranging warranty service).

If you are referring to AppleCare+ (an additional purchase):

• Coverage is not transferred automatically to a new owner of the watch (even though the original purchase remains associated with the watch's serial number).
• Certain steps are required from both the previous and new owner in order to properly transfer AppleCare+ to the new owner.
• To check what they are, refer to the plan documentation or contact Apple (contact details are provided within the plan documentation).
