Q: How to control the interconnection among devices

Hi,

I had an Ipad 2 and I got an Iphone and an Ipod Itouch. Now, when the phone ring all devices ring and when I take a photo this picture is shared among devices. The Itouch was a gift for my daughter and I want to control the device but I don't want to share info with  this itouch. On the other hand, Itouch can call other phones, how is it possible?? Thanks, and sorry of my questions are simple, I don't have experience with apple devices. .
