I understand that you have two questions, one for moving your backup files to another computer to restore from and another to get iTunes to not freeze when plugged in. Let's go over both answers.

As far as the freezing issue with iTunes when you plug in your iPhone, I would start with disabling automatic syncing within iTunes. Open up iTunes Preferences and go to the Devices tab and make sure that Prevent iPods, iPhones and iPads from syncing automatically is checked. Another thing to look at is to disable any iTunes plug-ins as a test to see if that is the cause. Take a look at the next article for more specific details on this issue.
