upgraded to OS X EL Capitan and now youtube wont work, videos wont play, any ideas on a fix, Iv'e looked but cant find anything on the forums although im sure there is.
Is it possible to go back to OSX Yosemite without gutting the whole machine and having to reinstall everything ?

To revert, you have to erase the hard drive and then reinstall from your backup.
Try pausing the video and then start playing it again. Also try Safari/Preferences/General and set Show scroll bars to when scrolling.

if Safari is not playing videos on YT try another browser. I have reservations about Chrome because it can be problematic on mac but the latest versions will come with the bundled with the most recent version of flash already embedded and configured.
