Wife has the kids attached to her AppleID for family sharing. I have the Apple Music account and kids would like to join my Apple Music membership. But, since they are already attached to the wife's account thru family sharing, they can't also be attached to my Apple Music membership. Do I transfer the Apple Music membership to the wife, or cancel my Apple Music membership and start over on the wifes side?

Since your wife is the organizer of your Family Sharing group, she would subscribe to Apple Music and choose the Family membership. You could then end your individual Apple Music subscription and (once it expires) join the Family Sharing group to take advantage of the Family membership, too.
