When you look at your Updates tab in the Mac App Store, you see the update summary, and then at the bottom, you will see a "More" option at the end of the last sentence. Click on that to get detailed info on what is contained in the update.

They are designed to be a secure as possible from outside interference or tampering. But very often, after a version of the operating system has been released new security vulnerabilities are discovered. Those are then patch to make them secure and those patches are made available to you in the form of a Security Update.
