Sorry, why would you need to restart your Mac to install the latest version of iTunes? And why can't you restart it?
Cheers,

My laptop has always told me it has to restart before it can upgrade. I'd assumed it was part of the process.
Why can't you restart it? And can you confirm what OS you are running on your Mac as well as what version of iTunes?

Do you have OS X 10.8.5 Mountain Lion or later?
I click restart and it begins the process but when it gets to the final screen before it turns off it stops there and will stay on until I give up 20 minutes later and push the button to turn it off myself. The version of itunes I'm trying to upgrade to is 12.3.2 but I'm not sure what OS I'm running on.
I bought this new from the the Apple store in the end of 2010 but as far as software my brother helped me set everything up back then since I qualified for computer illiterate.
To find out which OS X you are using, go to menu and select:
> About This Mac
It's OS X version 10.6.8

Then you cannot download and install iTunes 12.3.2 no matter how many times you reboot.
You first need to upgrade your OS X.

To update this software it says I have to restart as well so wish me luck!
Yes, upgrade an operating system will always reboot.
So I guess as of 2015 Google Chrome doesn't allow upgrades to OS X systems and it recommended I find a newer operating system which I am unfamiliar with so I will have to find an expert to help me with this issue.
Google chrome does not allow updates on older OSX systems (my 2009 macbook could no longer update chrome on osx 10.5 a couple of years back)
You can update to osx el capitan (OSX 10.11) from the app store for free.
Just open the app store. Find el capitan. download it and install it. then you can upgrade your itunes as well. and chrome.
And just so you know - you don't have to manually restart your Mac to do this. The Mac will restart itself when it needs to in order to complete the install, but you should simply go to the App Store, click on the El Capitan update, and then let the Mac do its work. You can watch it process, but don't mess with it while it is trying to go through the update steps. 🙂
Best of luck,
