I have two iPhones, one for me and one for my wife. When I set up her phone I used my Apple ID and iCloud account. Now when someone calls her or me, both phones ring, and we both get each other's texts. How can I completely delete my iCloud account and info from her phone so this doesn't happen?
Hers is a 5c and mine is a 5s.

One of you needs to log out of iCloud, Facetime, iMessage, iTunes & App Stores, then create a new Apple ID. You can like the accounts to share selected content using Family Sharing. Family Sharing - Apple Support
I have tried to do this via the iPhone but have been unsuccessful. How do I do that without having to erase the phone?
Go to Settings/iCloud. Tap on the Apple ID and tap Log out. You will have to enter your password. Then use another Apple ID or create one and log in with it.
Do the same for FaceTime, iTunes & App Stores and iMessage. Except you won't need the password.
Then set up Family Sharing and choose what to share.
You don't need to set up separate Apple id's
Go to:
Settings>
Phone>
Calls on other devices
then turn this feature off. Job done
