Keynote can't have changes made to a presentation while Keynote is in play.

workarounds are:

1 - blank the screen on the projector or display, stop play in Keynote, make changes to the totals slide then un-blank the screen

2 - use two computers one showing the continuous looped presentation, the second running a one slide presentation which can be updated while the looped presentation is on screen. Switch inputs to the display to show the total, then switch back again to resume the loops presentation.
