In Excel when I copy cells, the cells remain highlighted while I am doing other functions like pasting.
When I copy cells in Numbers, once I move the cursor, I no longer see which cells have been copied to the clipboard.
I find that seeing the copied cells is helpful.
Is there a way to do that in Numbers?

You could always give some product feedback here
even when you copy a selection, the next clear changes the focus and there is not "marker" for the copy selection.
you can also provide feedback directly from Numbers using the menu item "Numbers > Provide Numbers Feedback"
Not that I'm aware of. If you need to keep track of which cells are currently on the clipboard, you could use the Fill feature to fill them with a particular colour. The work flow would be:
Select cells to Copy.
Command-C
Fill with colour of your choice.
(Do whatever pasting you have planned)
Select the colour-filled cells again.
Change fill colour back to the previous colour (white, unless you've specified other colours).

As far as I can tell with Numbers v2, option + drag-and-drop will copy the source range to the destination range whilst preserving the selection state of source range until drag operation is complete.
Possibly it could be applicable to your use case.
