Q: the video intermitently changes color or goes out

Every once in a while (I haven't noticed a pattern of when), either the video turns off or the colors get strange.  I check the cables and it doesn't help.  Restarting always fixes it, but there must be an easier way to deal with this.  I have a Mac Mini model A1347 EMC 2840, with OSX 10.11.3

You haven't given us much to go on.

    1. What kind of video(s)...?

    2. What display are you using and how is it connected to your 2010 Mac Mini...?

To be honest it sounds like maybe the graphic's are over heating.

    1. When was the last time the bottom cover was off for a good cleaning.

    2. There is a good little App called  MacFanControl that I use to keep both my 2010 and 2012 Mac Mini's cool.
