Try this:
Open your Numbers app
Create a new spread sheet
Open your Contact list,
select the group or contacts you want and
drag the selection over on top of the open spread sheet.
You should then see the fields in columns and your contacts in the rows.

Second question - How to label the columns to the right of what I imported?

I don't quite understand column question, Janice. You label columns or change labels inside the column cells at top.
I suppose you could create a new column to the right and label each row?

Then add a column to right, e.g. does person get a holiday card?
To create a new column at right of Department in first image you would just right click anywhere in that column and select option to add column to the right.
I brought 4 columns over from my email contact list. I cannot add labels to the columns to the right of the first four. I can insert info into the columns but I would like to label the column in the space above the first row
