I can't help with the requirements needed to run Visio, but just in case you aren't already aware, note that there is no Mac version of Visio. To run it on a Mac you would have to first acquire and install Windows.
You may be wise to compare the various products in their divisions to see what level of
processor, memory, storage, and graphic capabilities you may need overall before you
seek to get one that could run the software or second OS (via virtual machine such as
Parallels, or via Boot Camp partition, under OS X) because the portable macbooks vary.

My first impression due to the lack of end-user upgrade to the hardware, would be to see
what you can live with in performance within a price-point; you buy the level you need as
these do not see upgrade afterward by the user. (Exception may be in storage flash, etc.)
Custom options appear on the order page online, some models may be available in retail
environs but double check the specs to know for sure you're looking at the same build.
My preference would be toward the MacBook Pro, and if you don't need the retina display
there are few options without it. The base MacBook Pro (13-inch) without Retina has an
optical drive and several ports. It is an older design in current production. Other non-retina
models include the MacBook/Air 11-inch and 13-inch. These are fairly good. Check specs.
The original design 13-inch MacBook Pro without Retina display does allow upgrade to RAM
and hard drive, it is the only one that still offers an optical drive for DVD/CD play+record.

At times, some of these models appear in Apple Store online Special Deals refurbished store.

Their discount is a fair percentage and that could budget toward an AppleCare extended plan.
Hopefully you find the model that will still have appeal two or three years from now.
Good luck & happy computing! 🙂
