Old Apple ID is still showing on my iCloud account on my new phone after i'd upated it from iTunes but the ID is an old e-mail address and i cant delete it to insert my new ID (e-mail), so phone doesn't sync with my account. ANY IDEAS ...??

Try Settings > General > Reset > Erase all content and settings.
If you still need this old Apple ID to perform this process, then your iPhone is Activation Locked as described here:
Find My iPhone Activation Lock - Apple Support
You will have to contact the original owner of the iPhone and have that person release the iPhone from Find My iPhone. Failing that, the iPhone would remain useless to you forever.
