My daughter wants to use my old iphone 5 but when i try to get into it, it says my Apple ID is incorrect although it is the only apple ID used on that phone. i have tried going onto icloud and finding and erasing it but it doesnt show up under the devices.

Then it is not registered to the AppleID that you thought. Somehow either you or someone else changed it without realizing you did or you forgot you changed it. With out the proper ID and password you will not be able to restore the phone.

we are trying to set it up without a sim card, could that be a reason?
You cannot activate an iPhone without a SIM card. The SIM card does not need to be active for you to use it in activating the phone.
