Configurator 2 will not remove apps or profiles

I recently was forced to upgrade to Configurator 2. I have figured out how to use it...sort of.

Dropping a blueprint on a supervised iPad 2 will not remove apps and profiles that are not in the blueprint.

So changing the ipad from one used in Kindergarten to 5th grade is now a nightmare, having to configure each one individually.

Any suggestions on how to make the blueprint overwrite what is currently on the ipad?
