what i mean is that whenever I have music playing on iTunes, if I get a notification, it lowers the music for a few seconds and interrupts the song. I just want to know how to stop it since it's pretty annoying in the car when I have my phone plugged in.
Turning the ringer off will prevent that from happening for most notifications. Calls will still interrupt music.
Because that is how it works. It lowers music volume so you can hear the notification. If you do not want the notification to interrupt the music, then you can turn on DND, or turn off Notifications. That is how it currently operates. There is no setting to still have notifications but not to hear them if you are listening to music.
Silencing the phone only prevents interruption to your music when the output is through the headphone jack, unfortunately.
but it's not that I don't want notifications or to be able to receive texts and calls etc, i just don't want it to disturb my music

Settings>Do Not Disturb>Manual>On. Make sure to turn it off when you are done listening to the music.
When you plug your phone in to your car, do you use an auxiliary cable to the headphone jack or do you use a charging cord?
