Can I operate my iPhone 5 without a cell phone carrier and have a phone number?

I have an iPhone 5, and would like to get rid of my monthly fee. Wifi is available almost everywhere now and there are apps for calling people. Is it possible to operate an iPhone 5 and still use it to the best of its ability without a carrier?

What are the best apps to operate without service?

What are some of the con's about switching to no carrier?

Almost any apps that connect to the Internet can use Wi-Fi instead of cellular data. If the phone has already been activated, then it will still work when the service is deactivated. Downsides would be that you wouldn't be able to access the Internet, send messages, or make calls without Wi-Fi.
