I know I may be paranoid, but I am also genuinely curious. Can a device such as an iPhone that would be running iOS get infected with malware? I have heard of ransom ware, key loggers and other virus on phones, would these just affect android devices or could they affect a device running iOS?

Not unless they have been jailbroken. There is adware you might find in the browser, but you can avoid that by being careful about the sites you visit and the links you click.

It's removing the programming that requires connecting to iTunes or the iTunes Store in order to put software on the device. By doing this the system is closed. No software except what you can get from the iTunes Store can be put on the device.
