I have two iPhones, one personal, one for my business. Both obviously have different numbers.
If someone calls my personal iPhone, that callers number appears on my works phone as well.....Strange and i can't figure it out ?
Are you using the same Apple ID?

Yes. Apple ID tied them together.
Check what you have in
Settings > iPhone > Calls on Other Devices > here?
Calls on other devices is OFF
If i sign out of my apple id on different device then i can't use iTunes etc on both ?
Ok, Use another Apple ID for all other Apple services (FaceTime, iMessage, etc...) on your business iPhone.
Create a new one here: https://appleid.apple.com
If you have share apps and you want to share them on both phones,
you can use the same purchasing Apple ID in Settings > iTunes & App Store > Apple ID: > here
