How do I remove old unwanted apps so that those on my family share don't see them?

You can hide them (you can't permanently delete any purchase) from the cloud via your computer's iTunes : Hide and unhide purchases in iTunes or iBooks on your Mac or PC - Apple Support (the 'x' might not show when you hover your mouse pointer over an app, there is a bug in iTunes, but clicking on its top left corner should still hide it)
