Can I exchange the unopened apple watch that I purchased at Target for a different color at the apple store?

No-one here can tell you what Apple will decide (this is a user-based community). However, Apple's Standard Return Policy only allows for products that were purchased directly from Apple to be returned to Apple for exchange or refund.
