When I decided to purchase the Brenthaven Collins Slim Brief Bag, the site said the product was in stock and would ship straight away. The site is now telling me the shipping is currently unavailable.
When can I expect to hear from apple about this?

Unfortunately, we are all other users here and do not know how Apple handles availability/inventory of items that are sold in their store. So, you will have to contact the Apple store.
Having said that - in general, my experience has been that any item that is "currently unavailable" may no longer be available/has been discontinued.
However, it appears to be available from the mfr:

where exactly are you getting your info from "the site" ?? Following this path?
if you are "RE-shopping", perhaps you got the last bag In-Stock?
