I am currently running ESXi 5.1 for a lab environment and can only run up to OS X Mountain Lion. I'd like to run OS X Server, but I'm not sure if I purchase OS X Server 5 if I will be able to download the older version. If I purchase OS X Server 5 will have the ability to download any older versions of OS X Server?

Unfortunately not. But at $20, it is a bargain to get serv 5. It works quite nicely as well.
